Ingredients
300gapples, peeled and finely grated(about 3 large apples)
50gground linseed
150gground hazelnuts
2teaspoonsof cinnamon
1teaspoonbaking powder
250gfine oatmeal
100gcoconut blossom sugar(alternatively 80g/3 oz of white or brown sugar)
Mix all the ingredients and leave to sit for at least 30 minutes.
Line 2 baking trays with baking paper and preheat oven to 160° C (320° F) convection oven or 180° C (360° F) top and bottom heat.
Bake the cookies for about 30 minutes until they are golden brown. If you place the 2 baking trays in the oven at the same time, change their position halfway through.
Let the cookies cool down completely.
Notes
You can store the cookies for up to 5 days in a sealed cookie jar.
On the first day, they are especially crispy (with a chewy center). If they soften after a day or two, you can bake them again in the oven for a few minutes.
