Wash your plums, cut them in half, and remove the pits.
Finely chop the dried figs, making sure to remove those tough stems.
In a medium pot, combine the chopped figs, orange juice, sherry (if you’re using it!), cinnamon, cloves, and cardamom. Cover and cook over low heat for about 10 minutes, just until the figs get nice and soft.
Add the plums to the pot, cover it again, and let everything gently simmer for another 10 minutes.
Remove the pot from the heat. Grab a spoon and fish out the cloves and cardamom pods. Or, if you want to make it super easy, you can tie them in a spice bag before you start!
