Apple snow is a classic German dessert that’s light, fluffy, and secretly so easy to make. No apples required — just applesauce and a few simple pantry staples.
Prepare the coconut cream: Scoop the solid part from the chilled coconut milk and beat with a mixer for 30 seconds. Add the sugar and whip for 1–2 minutes until creamy and slightly fluffy. (It won’t be as stiff as dairy whipped cream.) Save the liquid for smoothies, curries, or baking.
Mix the base: Stir together 200 g applesauce and the yogurt. Fold in the whipped coconut cream until smooth and fluffy.
Chill briefly: Place the mixture in the freezer for about 30 minutes (not frozen) or in the fridge for 1 hour to firm up slightly.
Layer in jars: Spoon 1 tablespoon applesauce into the bottom of each jar. Sprinkle each with ½ teaspoon cinnamon and a little coconut blossom sugar.
Add cream: Spoon the coconut-apple mixture evenly over the jars.
Top: Finish with apple slices, nuts, granola, mint—or leave it plain.Enjoy right away, or keep in the fridge for up to 3 days. The cream will firm up a little as it chills.
Notes
*You can use any vegan whipping cream (about 200 g / ¾ cup) instead of coconut cream. No need for overnight chilling, but cold cream whips more easily.**No coconut blossom sugar? Swap with brown sugar or maple syrup for a similar caramel-like note.
