Both the proverb and the two variations of the proverb apply to the cookies I’m presenting to you with this recipe. They are made with ingredients that would please any doctor: Fresh apples, hazelnuts, and oatmeal.
Do I need to mention that they have quickly become my favorite cookies? Because they have. I'm sure you'll love them as much as I do.

Let’s talk about the taste of these cookies. Apples, hazelnuts, and cinnamon have always been a match made in heaven. A fine caramel touch is added to the cookies thanks to the coconut blossom sugar. If you do not have coconut blossom sugar at hand, you can substitute for white or brown sugar. However, in that case, you will have to do without the hint of caramel flavor.
The sweetness of the cookies depends largely on the sweetness of the apples you use for the recipe. The sweeter the apples, the sweeter the cookies will be.
Speaking of sweetness: The cookies are not "uber-sweet". If you like your cookies rather "uber-sweet", add more sugar to the cookie dough. Just try the raw cookie dough and if it's not sweet enough for your taste, add as much sugar as your sweet tooth cries for.

Apple cookies
Ingredients
- 300 g apples, peeled and finely grated (about 3 large apples)
- 50 g ground linseed
- 150 g ground hazelnuts
- 2 teaspoons of cinnamon
- 1 teaspoon baking powder
- 250 g fine oatmeal
- 100 g coconut blossom sugar (alternatively 80g/3 oz of white or brown sugar)
- 50 ml of water
- 50 ml rapeseed oil
Instructions
- Mix all the ingredients and leave to sit for at least 30 minutes.
- Line 2 baking trays with baking paper and preheat oven to 160° C (320° F) convection oven or 180° C (360° F) top and bottom heat.
- Bake the cookies for about 30 minutes until they are golden brown. If you place the 2 baking trays in the oven at the same time, change their position halfway through.
- Let the cookies cool down completely.
Notes
On the first day, they are especially crispy (with a chewy center). If they soften after a day or two, you can bake them again in the oven for a few minutes.
