Despite the name avocado toast, I actually don't toast the bread most of the time. When using a fresh sourdough or hearty whole-grain bread, it almost feels like a shame to erase the soft bite. That softness pairs beautifully with the creamy avocado.
Over the years I've tried plenty of avocado toast recipes from across the internet, there are plenty of wonderful ones. Gradually I ended up creating the version I now make almost every time: avocado toast with hemp seeds and flaxseed oil. These two ingredients make such a big difference.

This version is simple and quick, but it goes a step beyond basic avocado toast. Flaxseed oil and hemp seeds make this recipe special.

- Bread
Hearty breads like sourdough, rye, or whole-grain bread work especially well because they hold the creamy avocado without getting soggy. But I also like a fresh Ciabatta bread, cut in half. If you opt for light white sandwich bread, do toast it so it holds better without getting soggy.
- Flaxseed oil
A small drizzle of flax oil underneath the avocado adds a nutty depth that pairs beautifully with the creamy fruit. Olive oil works too, but flax oil gives the toast a distinctive flavor.
- Avocados
Use perfectly ripe ones. The skin should yield slightly when pressed.
- Hemp seeds
Hulled hemp seeds add gentle crunch and also balance the richness of the avocado with a subtle nutty bitterness.

Avocado Toast With Hemp Seeds (Easy, Nutritious & Vegan)
Ingredients
- 4 slices bread
- 2 ripe avocados
- 4 teaspoons flaxseed oil or olive oil
- 2 teaspoons hulled hemp seeds
- 1-2 small chilies fresh or dried
- Salt to taste
- Pepper to taste
Instructions
- Toast the bread if you like it crispy (optional).
- Drizzle 1 teaspoon of flaxseed oil over each slice of bread and spread it lightly.
- Cut the avocados in half, remove the pit, and peel off the skin.
- Slice each avocado half into thin strips.
- Arrange one avocado half on each slice of bread.Tip: If you're in a hurry, you can also scoop the avocado directly onto the bread and mash it roughly with a fork.
- Sprinkle with hemp seeds, chopped chili, salt, and pepper, and enjoy immediately.

Avocado toast really shines with toppings. Since it's incredibly flexible, feel free to experiment with what you have on hand.

- anything pickled is amazing (pickled onions, cucumbers, olives, kimchi, sauerkraut)
- a squeeze of lemon juice
- lemon or grapefruit zest
- sliced tomatoes
- a handful of arugula
- microgreens

I wouldn't recommend it. Avocado browns quickly once cut. If you need to leave it out for 1-2 hours, add a little lemon juice to slow down browning.
