I mean: Mayo is yummy delicious! Avocado is creamyliciously yummi! So, what happens when you pair two amazingly delicious things? Do you get two times delicious? Or delicious to the power of two? Ugh, not sure about the math here, but the avocado mayonnaise we get IS luxuriously rich, silky smooth, and creamy with a cloud-like texture.
And with all the bonus benefits of healthy avocado fats. Because that’s basically what we’re doing here: We’re subbing in part of the oil in a classic mayonnaise recipe with avocados. No weird green taste here (only a teeny tiny yummy avocado flavor), just pure creamy goodness!
Not only is it a fun and healthy-ish twist, it's a lifesaver for plant-based peeps who can't do soy milk (the usual base for vegan mayo).
How To: Avocado Mayonnaise
If you love guacamole, you’re on the safe side with this avo mayo because we’re using ingredients you need for a basic guac recipe: avocados, garlic, lemon juice, S&P.
The only major addition is oil. Obviously, we’ll need to enrich the guac to make it creamier - fluffier if you want to call it this way.
Then you blend, blend, blend everything into a smooth, velvety oblivion and you’re done. An immersion blender works just here fine, but do go for a (high-speed) blender if you're using variations with herbs or ginger (see next section).
Variations for the Avocado Mayo
Lighter Version
If you need to be careful with your fat intake, sub the oil for an (unsweetened) vegan yogurt. Yum.
Herby Avocado Mayo
Basil avo mayo? Parsley avo mayo? Both herbs work a charm in this recipe, depending on what you want to use the mayo for. I like using the basil version for potato salad or an Italian-style sandwich.
Parsley’s a jack-of-all-trades for any mayo situation.
Asian-Inspired Flavor
This one knocked me off my feet! Peanut butter, ginger, and cilantro take the avo mayo straight to Thai food heaven. Pair it with wide rice noodles for a slurp-tastic, flavor-explosion experience! We have this dish on repeat: Swirl, slurp, enjoy!

Homemade Avocado Mayonnaise
Equipment
- Immersion blender or high-speed blender
Ingredients
- 2 medium avocados flesh only
- 50 ml neutral oil you can use olive oil if you know that the taste goes with whatever you’ll use the mayo for
- 50 ml water
- 1 large garlic clove peeled
- 4 tablespoons lemon juice about 1 lemon
- Salt & pepper to taste
- Optional: herbs of choice like ½ bunch of parsley or basil
For a lighter version
- Substitute the oil and water with 150g unsweetened plant-based yogurt
For an Asian-inspired twist
- 20-30 g cilantro
- 1 tablespoon unsweetened peanut butter
- 1 fingersized knob of ginger no need to peel if using organic
Instructions
- Blend everything until creamy and smooth.
