I took one sip. And then - just like that - the glass was empty!?
"Who drank my coconut smoothie?" I murmured, looking around. Merlin, our boy cat, looked at me calmly, clearly innocent. He doesn't touch anything that's not his food or, oddly, the myrtle plant. Mim, our cutsie foodie cat, was nowhere to be seen. So, it must've been … ME? I must have inhaled the whole thing.
I mean, I get it. This smoothie? Hands down, the best sweet, creamy smoothie. Made with only good-for-you-ingredients, such as coconut milk, ripe bananas, turmeric, and oats.
What's Special About This Coconut Smoothie Recipe
It's creamy. Actually, creamy doesn't quite cover it. This is velvety-coconut-milk-and-ripe-bananas kind of creamy. Add oats - maybe - flaxseeds or chia seeds, and you reach a whole new level of richness. Smooth and indulgent enough to feel like a milkshake, yet made with nothing but natural sweetness. No added sugar, just pure, wholesome flavor.
The heart of this smoothie, though, is the turmeric. It's the ingredient that sets the tone and gives this coconut smoothie its unique personality and depth. That gentle earthiness adds such a nice touch.
And when everything comes together, these simple, wonderful ingredients turn into a drink that feels like a small luxury. A warm, sunny escape to somewhere far, far away. Somewhere you've never been, but always wanted to go. Can you picture it?

Ingredients
Not a lot, and a couple are optional. I think you may have most of these in your pantry already.
- Turmeric
Only two knobs of fresh turmeric - though ground turmeric is okay too. I used fresh knobs in this smoothie because the flavor is brighter and really shines (pun totally intended 😉). - Coconut milk
Rich, full-fat coconut milk is our pick for today-because indulgence is the name of the game! A whole can of it, we're not messing around (but, I'll admit that we can and must add water to the smoothie). - Bananas
Four large uber-ripe bananas. It's a lot, but we're relying on them for sweetness since there's no added sugar. If you have only yellow bananas (that is, no brown spots on the peel indicating the uber ripeness), you might need to add a sweetener of your choice, for example one or two dates. - Rolled Oats
Perfect for making this smoothie more filling and nutrition-dense. Plus, the added creaminess is welcome. - Flaxseeds or chia seeds (optional)
Not necessarily needed, but they, too, bring more nutritional value and creaminess. - Ginger (optional)
Also not needed, but adding just two slices brings in an extra layer of flavor without making your smoothie over-spicy.

- A pinch of black pepper (optional, enhances turmeric's benefits)

John B says
you always add black pepper with turmeric to aid in assimilation
Ramona says
Yes, you're right. Studies suggest black pepper helps maximize turmeric's benefits, which is why I made sure to include it in the recipe.
