In Germany, this pasta salad is the thing. Every BBQ, every dorm party, every picnic blanket all summer long needs a bowl of it.
It's so iconic that I had potluck invites come with a spreadsheet, just to avoid the dilemma of 15 people showing up with the exact same bowl. Whoever claims Nudelsalat (German for pasta salad) first in the spreadsheet is the lucky one. You'll spend hardly any time in the kitchen AND get to bring a crowd favorite.

What's in a Classic German Pasta Salad?
Well, first off: corn, peas, and dill pickles. Always.
And usually some chopped-up Fleischwurst (kind of like bologna). But we're keeping things plant-based here, so we're swapping the meat for smoked tofu-just as hearty, just as flavorful. If you spot a vegan version of Fleischwurst at your local store, go ahead and toss that in instead.
And then there's the dressing. Creamy mayo is key, but it's often balanced with a little plain yogurt to keep things lighter. That bit of acidity really pulls the whole salad together. If you want it extra creamy, skip the yogurt and use just mayo.

You've probably heard about macaroni salad. It's the go-to pasta salad in North America. It might sound a lot like German pasta salad-but they're definitely not the same. Let's take a closer look.
The pasta:
Macaroni salad goes for elbow macaroni. German pasta salad is about fusilli (twirls for the win in soaking up the saucy mayo).
The dressing:
Macaroni salad tends to be on the sweeter side-mayo with some sugar. German pasta salad leans tangy, thanks to a generous splash of dill pickle brine (plus the pickled cucumbers).
The extras:
- Macaroni salad usually packs in crunchy fresh veggies like celery, onions, and bell peppers. German pasta salad keeps things a bit simpler: peas, corn, pickles. (Red bell pepper could be added, though; onions or celery rather not.)
- And here's a big one: German pasta salad almost always includes some kind of meaty protein-traditionally Fleischwurst (like bologna). Macaroni pasta skips this ingredient completely, or goes for hard-boiled eggs.
Both pasta salad versions are delicious, both have a rightful place on this planet-and honestly, I'd never say no to either (vegan version). But today, we're giving the spotlight to the German classic.

Authentic German Pasta Salad (Vegan)
Ingredients
Salad
- 500 g fusilli pasta (whole wheat works great, too)
- 450 g frozen peas
- 400 g smoked tofu
- 290 g pickled cucumbers (drained weight)
Don't toss the pickle juice, we'll need it for the dressing!
- 460 g canned corn (drained weight)
Dressing
- 250 g vegan mayonnaise* (store-bought or homemade - see my easy recipe here)
- 200 g plain, unsweetened vegan yogurt
- 3-6 tablespoons pickle juice from the jar above
- 2 tablespoons vegetable bouillon powder
- 1 teaspoon paprika powder
- 2 teaspoons garlic powder or 1 clove fresh garlic, pressed (optional)
Instructions
- Cook the pasta until al dente, according to the package instructions. Drain and set aside to cool slightly.
- Thaw the peas (you can use them raw-no need to cook).
- Finely dice the pickled cucumbers and the tofu. If you have one, use a vegetable chopper to speed things up.
- In a medium bowl, whisk together all the dressing ingredients until smooth.
- In a large mixing bowl, combine the pasta, peas, corn, smoked tofu, and pickles. Pour the dressing over and toss well until everything is nicely coated.
- Taste and adjust-add more pickle juice, salt, or a spoonful of mayo if needed.
- Let it chill! This salad gets even better on day two or three as the flavors meld.
