Ever open your fridge and see those sad, lonely celery leaves leftover from dinner? Ugh, I feel their pain! Pretty sure we've all been there.
I mean, so many recipes call for just the celery stalks (hello baked beans, celery salad, avocado salsa, buckwheat salad), which I get; the stalks are the crunchy part with a more neutral flavor compared to the leaves.
Yet those leftover celery leaves? They're loaded with green goodness (think vitamins!), so instead of tossing them in the compost bin (no judgment, though), let's turn them into a nutrient BOMB that also tastes AMAZING!
Enter the banana blueberry smoothie.
This one is packed with purple blueberry power, creamy banana goodness, and a green celery & spirulina surprise. But don't let the vibrant purple hue fool you – this drink packs a serious punch of greens and vitamins! No worries, though, the sneaky greens won't overpower the party! Lemon juice and sweet banana team up to create a perfectly balanced, sweet taste that'll have you saying YUM! with every sip.
Speaking of extras, the spirulina is totally optional. It adds a nutrient boost you won't even taste, but if you don't have it, just skip it.
Here's What You Need for This Blueberry Smoothie
Here's what goes into this celery smoothie goodness.
- Fresh or frozen blueberries
Because, duh, blueberries in smoothies are a match made in heaven! Frozen or fresh, they work like a charm. - Fresh or frozen bananas
Sweetness and creaminess, all rolled into one. Frozen bananas can make things extra thick and frosty – perfect for a summer day! - Celery leaves
Don't toss 'em! These leafy greens are full of vitamins and add a subtle, refreshing touch. Plus, they're a great way to reduce food waste!
If you have only celery stalks instead of leaves, use those. Two to three stalks should be perfect. - Spirulina? Totally optional, but totally awesome!
This green goodness is a nutritional powerhouse that blends right in and doesn't affect the taste. - Lemon juice
A squeeze of sunshine to keep any bitterness (from the celery leaves or spirulina) at bay.
Blender Game Strong?
A high-speed blender is your best friend here. It'll pulverize those celery leaves into smoothie oblivion, leaving you with the smoothest, silkiest drink ever! I'm a big fan of my Vitamix A3500, but any high-powered blender will do the trick.
Hope you're ready to ditch the celery-leaf dumping and whip up this refreshing, vibrant, and oh-so-berry-liciously sweet smoothie!
